Fried Cabbage Recipe

What we call cabbage  actually comes from the wild mustard plant family. A native plant to the Mediterranean region, growing along the sea line, cabbage became known as sea cabbage and wild cabbage.  Dating back to ancient Greek and Roman times cabbage was recognized for its medicinal properties, such as being an excellent source of vitamin C.  Cabbage also contains a significant amounts of glutamine, amino acid and the chemical indole-3-carbinol.

The use of  "Soul Food" is a cusine from simple ingredients and inexpensive cuts of meat that are meant to create hearty meals.  Traditional recipes for "Soul Food"  tend to to be high in calories, fat and sodium.  Today a more mordern version tend to exchange vegatable oil for lard and maybe smoked turkey for the pork.  No matter how you choose to adjust the recipe enjoy it with your family and friends.  Let me know how you prepared it, be creative.  

Fried Cabbage Recipe

3 slices bacon, cut into thirds
1/3 cup vegetable oil
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 head cabbage, cored and sliced
1 white onion, chopped
1 pinch white sugar

Place the bacon and vegetable oil into a large pot over medium heat. Season with salt and pepper. Cook for about 5 minutes, or until bacon is crisp.  Add cabbage, onion, and sugar to the pot; cook and stir continuously for 5 minutes, or until tender.
