Strawberry Divinity

Strawberry divinity is a sweet holiday treat that makes for a timeless gift for everybody.

Ingredients

2 large egg whites, at room temperature
1 -3 ounce package strawberry flavored gelatin
3 cups white granulated sugar
3/4 cup hot water
3/4 cup light corn syrup

Step 1...Line a 9 inch square baking pan with aluminum foil, extend the foil over 2 sides of the pan; lightly grease the foil with shortening.

Step 2...In a large bowl, use an electric mixer and beat the 2 egg whites until stiff. Gradually add the strawberry gelatin until well blended, set aside.

Step 3...Butter the sides of a heavy medium-sized saucepan. Combine the 3 cups sugar, 3/4 cup hot water, and 3/4 cup light corn syrup in the saucepan. Stirring constantly, cook over medium-low heat until the sugar dissolves. Use a pastry brush dipped in hot water to wash down any sugar crystals that have formed on the sides of the pan.

Step 4...Attach a candy thermometer to the side of the saucepan, making sure the thermometer does not touch the bottom of the pan. Increase heat to medium and bring to a boil. cook without stirring, just until the temperature reaches about 254 degrees. You can also test 1/2 teaspoon in ice water. Mixture will roll into a hard ball in the ice water and remain hard when removed from the water.

Step 5...With electric mixer set on high-speed, slowly pour hot mixture over the stiff egg whites; beat until candy thickens and begins to hold shape. Spread into prepared pan and cool completely. Cut into 1 inch squares and wrap in each piece in waxed paper. Store in an airtight container in the refrigerator.
